BACON WRAPPED DATES

Stuffed with Blue Cheese and Almonds
These make a great little appetizer perfect as a part of a tapas display. I watched a guy at one of our
caterings eat about 12 of them. He kept coming back through the line thinking he was sly. They really are
addictive! You can make them without bacon and they are still pretty good (and then they don't need to be
baked either).

 

Makes 24

 

Ingredients
12 whole dried dates
12 strips bacon
24 marcona almonds
4 oz. Spanish blue cheese (Valdeon or La Peral)

 

Cut the bacon strips in half and arrange on a sheet pan. Bake them at 300 degrees for about 10 - 12
minutes. You don't want to brown or crisp them, you just want to cook them about half way. Drain them on paper towels. Cut the dates in half and remove the pits. Stuff each half with 1 almond and about 1 T. blue cheese. Wrap each with a piece of bacon and place on a cookie sheet. Turn the oven up to 425 degrees and bake the dates for about 7 - 8 minutes or just long enough to brown the bacon a little. Let cool and serve on toothpicks,
